Does anyone know what's involved in putting a financial write off back on the road?

The insurance company deemed this too costly to fix even though its superficial damage that can be fixed cheaply using second hand parts.

What do I need to do once its fixed before it can be put back on the road or do I just insure it and drive?

Not my car by the way.

Insure and drive unless its Cat B which is breaker only.Do you know if its Cat C or Cat D.?? Dont think there are any restrictions here but in Uk /N.I. the Cat C cars have to have Vehicle Identity Check (VIC) to confirm its the same shell and not reshelled job.VOSA do the test in N.I. but its not quality test of repair or anything, simple confirmation of repair/same shell etc. Drive her on...
